Instant Pot N'Awlins Style Red Beans
Ingredients:

2 Cups dry Red Beans
1 small chunk (palm sized) Pork Salt Meat
1 link of Smoked Sausage, halved or quartered
1/2 stick Salted Butter
1 large Beef Bouillon cube, dissolved in water
1 cup Seasoning Blend (onion, bell pepper, celery- finely chopped)
1 Tbsp Minced Garlic
1 Tbsp Season- All (or Cajun Seasoning such as Tony Chachere's or Zatarain's if you like it salty with a little kick)
1 Bay Leaf
1 tsp ground dry Parsley
4 - 5 Cups water
1-2 Cups cooked White Rice
OPTIONAL: 1 tsp Gumbo File (to be added at the end); 1 Tbsp Worchestersire Sauce; 1 tsp salt to taste; Hot Sauce to taste.

INSTRUCTIONS:

*Soak Red Beans in about 4 cups of water for at least 2 -3 hours or overnight.
*In Instant Pot, sautee Butter, Seasoning Blend, Minced Garlic, & Sausage for approximately 10 minutes until Garlic is cooked.
*Add all other ingredients, lock the lid and pressure valve
*Press "Manual"and set cook time to 60 minutes.
*Release pressure via valve and let cook an additonal 20 minutes before removing the lid (this is a good time to put your rice to cook).
*Remove lid, remove bay leaf and mash up some of the beans with a potato masher or large fork to reach creamy consistency. You may want to remove some of the excess liquid, but reserve it in case you want to add some back after you "cream" the beans.
Add optional items if desired.
Serve over rice with a side of hot buttered Corn Bread. YUUUUUUMMMMM!
